Word Origin & Etymology
Borrowed in the late 19th century from French 'ganache', originally meaning 'jowl' or 'fool' (derived from Italian 'ganascia', meaning 'jaw'). According to culinary folklore, a Parisian pastry apprentice accidentally spilled hot cream into a bowl of chocolate, was scolded as a 'ganache' (fool) by the chef, and the resulting smooth mixture retained the insult as its name.
